A not so bland version of sprouts

We all know healthy sprouts are….but who can explain this to my taste buds who hate them. Every time I look at them, my mind tells me that they are good for me while my taste buds just cringe at their sight. So I decided to trick my taste buds into enjoying this healthy treat while making sure that I cook them in a way so that they don’t loose their benefits.

I am definitely not saying that its a healthy-healthy recipe but then its definitely healthier than the usual things that we have for snacks.

Here’s what you need to have:

  • 2-3 cloves of garlic- grated
  • 1/4 inch ginger- grated
  • t tbsp. oil
  • 1 onion- chopped
  • 1 capsicum- blanched and chopped
  • 1 carrot- blanched and chopped
  • 1-2 chilies- chopped
  • 1 cup of moong sprouts
  • 1/2 cup of cottage cheese- scrambled
  • 3/4 cup Tomato ketchup
  • 2-3 tbsp. Chili Sauce( optional)
Here’s what you need to do:
Heat the oil in a pan and once its warm, add the grated garlic and ginger. When these start getting a little brownish, add chili and onion. 

Keep cooking the onions till they start becoming transparent. As we are using very little oil, there is a change that the onions might start sticking to the pan. Simple trick to avoid it is add 1 tbsp. of water. This will not only prevent the onions from sticking but also prevent them from getting brown.
Once the onions are done, add the carrots, cook them for a minute and then add the capsicum. we want all the vegetable to not get overcooked that’s why we start from the one that needs more time to cook and then move to vegetables that are semi-cooked and do not need to much time in the pan.

Now that we all the vegetables, add ketchup and the chili sauce. If you don’t like your food to be too spicy, skip the chili sauce. Mix all the vegetables so that everything is coated with ketchup and then add the scrambled cottage cheese.Mix well.

After everything has been mixed together, add the sprouts, mix again so that everything gets coated with the sauce and take it of the heat.As the ketchup and the chili sauce have salt in them, I usually never need to add any salt but you can obviously add salt according to your taste.
As I have already mentioned, I am not saying its absolutely healthy but then it just has one spoon of oil in it, and loads of vegetables. You can add other vegetables as well, its just that the sauce and the garlic-ginger make it interesting to eat.
