Russian Salad Recipe

Now that I am married to into a khata-peeta Punjabi household, one of the forst expectation from me was to whip up yummy food. Unfortunately I have zero experience and negative interest in cooking but one thing I have learnt is that never let people think you can’t do something, so to make sure I am not dismissed as a newbie in a kitchen where just about everybody cooks amazing stuff, I decided to research and learn some quick recipes that would win hearts without making me sweating too much. One such easy peesy recipe is my version of a Russian Salad.

What you need:

  • 1 1/2 cup of boiled Macaroni or Elbow Pasta
  • 2-3 tbsp. of Mayonnaise
  • 1/2 cup Boiled Peas
  • 1/2 cup Boiled Sweet Corn
  • 1/2 cup of chopped canned pineapples
  • 1/2 cup of chopped fresh grapes ( you can use a mix of green and purple ones)
  • 1/2 cup of apples, skin removed and chopped into small pieces
  • 1 tbsp. of vinegar
  • Salt/Pepper to taste

Once you have the ingredients ready, all you need to do is mix them together in a big bowl till all the vegetables, pasta and fruits are coated with mayonnaise. If you feel the mayonnaise is not enough to coat the vegetables, try to dilute it first by adding some water and if you still feels it is not creamy enough add another tbsp. of mayonnaise to it. You want the mayonnaise to look creamy in the salad but if you add too much then the ingredients are just going to stick together and your salad is going to end up being very heavy. A little addition that I like to do in the salad is add a little bit of the sugar syrup that comes with the canned pineapple which gives a nice sweetness to it. Let the salad rest in the fridge and cool down before you serve it.


This one is definitely a crowd pleaser and doesn’t take more than 20 minutes to whip up if you have all the ingredients in your kitchen. You can add more vegetables like bell pepper, par boiled carrots, par boiled french beans and even replace the canned pineapples with the canned fruit medley. The measurements mentioned in the post are enough for 3 generous servings so go on and try it and let me know how you like it.
